Ingredients

4 slices bacon, chopped

1/2 lb smoked sausage, sliced

1 small onion, diced

1 bell pepper, diced

2 celery stalks, chopped

3 cloves garlic, minced

2 tbsp all-purpose flour

4 cups chicken broth

2 cups diced potatoes (Yukon Gold or Russet)

1 cup heavy cream or half-and-half

1 tsp Cajun seasoning

1/2 tsp smoked paprika

1/4 tsp cayenne pepper (optional for heat)

Salt and black pepper to taste

2 green onions, sliced (for garnish)


Instructions

1. In a large pot or Dutch oven, cook bacon over medium heat until crispy. Remove and set aside, leaving the drippings.

2. Add sausage to the pot and sear until browned, about 4–5 minutes. Remove and set aside with the bacon.

3. Add onion, bell pepper, and celery to the pot and sauté until softened, about 5 minutes.

4. Stir in garlic and cook for another minute until fragrant.

5. Sprinkle flour over the vegetables and stir for 1–2 minutes to form a roux.

6. Gradually pour in chicken broth while stirring to avoid lumps.

7. Add potatoes, Cajun seasoning, paprika, cayenne, salt, and pepper. Bring to a simmer.

8. Cook for 15–20 minutes until potatoes are tender.

9. Stir in cream, bacon, and sausage. Simmer another 5 minutes to heat through.

10. Serve hot, topped with green onions and an extra sprinkle of Cajun spice.

Notes

For a thicker soup, mash some of the potatoes with the back of a spoon.

Use andouille sausage for authentic Cajun flavor.
