These Burrata Zucchini Lasagna Rolls are a light, creamy, and irresistibly cheesy twist on classic lasagna. With layers of tender zucchini, rich marinara, and luscious burrata, this dish brings all the flavor of comfort food — without the heaviness.
Ingredients
2 medium zucchinis, sliced lengthwise into thin strips
1 cup ricotta cheese
1/2 cup grated Parmesan cheese
1 large egg
1/2 tsp garlic powder
1 tbsp fresh basil, chopped
Salt and pepper to taste
1 cup marinara sauce
1 burrata ball (about 4 oz), torn into pieces
1 tbsp olive oil
Fresh basil leaves, for garnish
Instructions
1. Preheat oven to 400°F (200°C) and lightly grease a baking dish.
2. Use a mandoline or vegetable peeler to slice zucchini into thin, even strips.
3. Lay zucchini slices on a paper towel and sprinkle lightly with salt. Let sit 10 minutes, then pat dry to remove moisture.
4. In a bowl, mix ricotta, Parmesan, egg, garlic powder, basil, salt, and pepper until smooth.
5. Spread a spoonful of the ricotta mixture onto each zucchini strip and roll up tightly.
6. Pour a thin layer of marinara sauce into the baking dish and place rolls seam-side down.
7. Spoon remaining marinara on top, drizzle with olive oil, and bake for 20–25 minutes.
8. Remove from oven and top with torn burrata pieces. Let sit for 5 minutes so the cheese melts slightly.
9. Garnish with fresh basil and serve warm.
Notes
Pat the zucchini slices dry to avoid excess moisture.
Add spinach or roasted red peppers to the filling for extra flavor.
For a heartier version, layer with cooked lasagna noodles or serve with garlic bread.
Swap burrata for mozzarella if you prefer a milder cheese — still deliciously creamy!
