A delightful and nutritious dish combining chicken, broccoli, and spaghetti, perfect for busy weeknights.


Ingredients

  • 8 ounces spaghetti
  • 2 cups broccoli florets
  • 2 chicken thighs, boneless and skinless
  • 1 cup light cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: garlic powder
  • Optional: grated parmesan

Instructions

  1. Preheat the oven to 400°F (200°C). Season the chicken thighs with olive oil, salt, pepper, and optional garlic powder. Rub the seasonings all over the chicken. Place in a baking dish and bake for 25-30 minutes until fully cooked, reaching an internal temperature of 165°F (74°C).
  2. Cook the spaghetti according to package instructions in salted water. In the last 3-4 minutes of cooking, add the broccoli florets. Drain spaghetti and broccoli together, then return to the pot.
  3. Shred the baked chicken thighs and add them to the pot with the light cheese. Mix until the cheese is melted and everything is well coated.
  4. Serve hot, topped with grated parmesan if desired, and enjoy!

Notes

Serve with a simple side salad or garlic bread. Garnish with fresh herbs for added color.
