- 8 ounces spaghetti
- 2 cups broccoli florets
- 2 chicken thighs, boneless and skinless
- 1 cup light cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
- Optional: garlic powder
- Optional: grated parmesan
Instructions
- Preheat the oven to 400°F (200°C). Season the chicken thighs with olive oil, salt, pepper, and optional garlic powder. Rub the seasonings all over the chicken. Place in a baking dish and bake for 25-30 minutes until fully cooked, reaching an internal temperature of 165°F (74°C).
- Cook the spaghetti according to package instructions in salted water. In the last 3-4 minutes of cooking, add the broccoli florets. Drain spaghetti and broccoli together, then return to the pot.
- Shred the baked chicken thighs and add them to the pot with the light cheese. Mix until the cheese is melted and everything is well coated.
- Serve hot, topped with grated parmesan if desired, and enjoy!

Serve with a simple side salad or garlic bread. Garnish with fresh herbs for added color.
