Description

Delightful Black Forest Cupcakes blend rich chocolate flavors with tart cherries and luscious whipped cream for a perfect treat.


Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsweetened cocoa powder
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup boiling water
  • 1 jar (about 12 oz) cherry pie filling
  • 1 cup semi-sweet chocolate chips
  • ½ cup heavy cream
  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract
  • Shaved chocolate or chocolate curls (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  3. In a separate bowl, mix buttermilk, vegetable oil, eggs, and vanilla extract until smooth.
  4. Slowly add the wet mixture to the dry ingredients, whisking continuously. Then add boiling water and mix until smooth.
  5. Pour the batter into cupcake liners, filling each about 2/3 full.
  6. Bake for 18-20 minutes until a toothpick comes out clean.
  7. Cool in the pan for 5 minutes before transferring to a wire rack.
  8. For ganache, heat heavy cream until simmering, pour over chocolate chips, and stir until smooth.
  9. Once cooled, cut out a small section from each cupcake and fill with cherry pie filling.
  10. Drizzle or spread ganache over the cupcakes.
  11. Whip heavy cream with powdered sugar and vanilla until stiff peaks form, then top cupcakes.
  12. Garnish with chocolate curls if desired.

Notes

Store in an airtight container. Best consumed within 1-2 days if topped with whipped cream.
