- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk
- 1/2 cup cherry filling
- Whipped cream for topping

Instructions
- Preheat your oven to 350°F (175°C).
- Line a cupcake tin with paper liners.
- Mix together flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large bowl.
- In a separate bowl, whisk together vegetable oil, eggs, vanilla extract, and buttermilk.
- Pour wet ingredients into dry ingredients and mix until just combined.
- Fill cupcake liners about 2/3 full with batter.
- Bake for 18-20 minutes, or until a toothpick comes out clean.
- Let the cupcakes cool in the tin for a few minutes and then transfer to a wire rack to cool completely.
- Cut a small hole in the center of each cupcake and fill with cherry filling.
- Top each cupcake with whipped cream and garnish with chocolate shavings.
