  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 1/2 cup cherry filling
  • Whipped cream for topping
  • Chocolate shavings for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a cupcake tin with paper liners.
  3. Mix together flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large bowl.
  4. In a separate bowl, whisk together vegetable oil, eggs, vanilla extract, and buttermilk.
  5. Pour wet ingredients into dry ingredients and mix until just combined.
  6. Fill cupcake liners about 2/3 full with batter.
  7. Bake for 18-20 minutes, or until a toothpick comes out clean.
  8. Let the cupcakes cool in the tin for a few minutes and then transfer to a wire rack to cool completely.
  9. Cut a small hole in the center of each cupcake and fill with cherry filling.
  10. Top each cupcake with whipped cream and garnish with chocolate shavings.
