- 8 ounces pasta (penne or rotini)
- 1 can (5 ounces) tuna, drained
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/2 cup mayonnaise
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Cook the pasta: Start by boiling water in a large pot. Once it’s boiling, add your pasta. Cook according to the package instructions until it reaches al dente. After it’s cooked, drain the pasta and rinse it under cold water.
- Prepare the vegetables: In a large bowl, combine the drained tuna, halved cherry tomatoes, diced cucumber, and finely chopped red onion. Gently mix these together.
- Make the dressing: In a separate bowl, mix together the mayonnaise, lemon juice, salt, and pepper. Stir the ingredients until they are well blended.
- Combine everything: Once the cooked pasta has cooled down, add it to the bowl with the tuna and vegetables. Pour the dressing over the top. Toss everything gently to combine well.
- Garnish and serve: If you like, garnish with fresh parsley. You can serve the salad immediately or refrigerate it for later.
