Ingredients
2 tbsp butter
1 tbsp olive oil
1 small onion, finely diced
2 carrots, peeled and diced
2 celery stalks, diced
3 garlic cloves, minced
1 cup wild rice blend, uncooked
6 cups chicken broth
2 cups cooked shredded chicken
1 tsp dried thyme
1 tsp dried parsley
1/2 tsp paprika
Salt and pepper to taste
1 cup heavy cream
2 tbsp all-purpose flour
Fresh parsley for garnish
Instructions
1. Heat butter and olive oil in a large pot over medium heat.
2. Add onion, carrots, and celery; sauté until softened.
3. Stir in garlic, thyme, parsley, paprika, salt, and pepper.
4. Add wild rice and chicken broth; bring to a boil.
5. Reduce heat, cover, and simmer for 35–40 minutes until rice is tender.
6. Stir in shredded chicken and simmer for 5 more minutes.
7. In a small bowl, whisk together cream and flour until smooth, then stir into soup.
8. Simmer until thickened and creamy, about 5 minutes.
9. Garnish with fresh parsley and serve warm.
Notes
For a dairy-free version, substitute coconut milk for cream.
Add mushrooms for extra flavor and texture.
