This Cowboy Meatloaf and Potato Casserole is the ultimate comfort meal — hearty, cheesy, and packed with smoky barbecue flavor. Juicy meatloaf is topped with creamy mashed potatoes, melted cheese, and crispy fried onions for a dinner that’ll make everyone ask for seconds!
Ingredients
**Meatloaf Layer:**
1 1/2 lbs ground beef
1/2 cup breadcrumbs
1/2 cup barbecue sauce (plus extra for topping)
1/2 cup onion, finely chopped
1/4 cup milk
1 egg
1 tsp garlic powder
1 tsp smoked paprika
1/2 tsp salt
1/4 tsp black pepper
**Potato Layer:**
4 cups mashed potatoes (prepared)
1/2 cup sour cream
1/2 cup shredded cheddar cheese
Salt and pepper to taste
**Topping:**
1 cup shredded cheddar cheese
1 cup crispy fried onions
2 tbsp chopped green onions (for garnish)
Instructions
1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
2. In a large bowl, mix ground beef, breadcrumbs, barbecue sauce, onion, milk, egg, and seasonings until combined.
3. Press meatloaf mixture evenly into the prepared baking dish.
4. Spread a thin layer of barbecue sauce on top.
5. Bake for 25 minutes until mostly cooked through.
6. Meanwhile, mix mashed potatoes with sour cream, cheddar cheese, salt, and pepper until creamy.
7. Remove meatloaf from oven and spread the mashed potatoes evenly on top.
8. Sprinkle remaining cheese and fried onions over the potatoes.
9. Return to oven and bake for another 15–20 minutes, until golden and bubbly.
10. Garnish with green onions and serve hot.
Notes
Substitute ground turkey or pork for a lighter twist.
Add diced jalapeños for a spicy cowboy kick.
