Ingredients

  • 1/2 medium yellow onion, finely chopped
  • 1/3 cup all-purpose flour
  • 2 cups low sodium chicken stock
  • 2 cups whole milk
  • To taste salt and black pepper
  • 2 1/2 cups broccoli florets, chopped small
  • 1 stalk celery, finely diced
  • 2 cups sharp cheddar cheese, freshly shredded
  • 1 cup extra shredded cheddar for garnish (optional)

Instructions

  1. Melt the butter in a large pot over medium heat.
  2. Add the finely chopped onion to the melted butter; cook for 4 to 5 minutes until soft and translucent.
  3. Whisk in the all-purpose flour; cook for 1 to 2 minutes until lightly golden.
  4. Pour in the low sodium chicken stock while whisking continuously to prevent lumps.
  5. Add the finely diced celery and chopped broccoli; bring to a gentle boil, then reduce heat and simmer for 12 to 15 minutes.
  6. Stir in the whole milk and simmer for an additional 2 to 3 minutes until slightly thickened.
  7. Add the freshly shredded sharp cheddar cheese in small handfuls, stirring until melted.
  8. Serve warm, garnished with extra shredded cheddar cheese if desired.
