- 1/2 medium yellow onion, finely chopped
- 1/3 cup all-purpose flour
- 2 cups low sodium chicken stock
- 2 cups whole milk
- To taste salt and black pepper
- 2 1/2 cups broccoli florets, chopped small
- 1 stalk celery, finely diced
- 2 cups sharp cheddar cheese, freshly shredded
- 1 cup extra shredded cheddar for garnish (optional)
Instructions
- Melt the butter in a large pot over medium heat.
- Add the finely chopped onion to the melted butter; cook for 4 to 5 minutes until soft and translucent.
- Whisk in the all-purpose flour; cook for 1 to 2 minutes until lightly golden.
- Pour in the low sodium chicken stock while whisking continuously to prevent lumps.
- Add the finely diced celery and chopped broccoli; bring to a gentle boil, then reduce heat and simmer for 12 to 15 minutes.
- Stir in the whole milk and simmer for an additional 2 to 3 minutes until slightly thickened.
- Add the freshly shredded sharp cheddar cheese in small handfuls, stirring until melted.
- Serve warm, garnished with extra shredded cheddar cheese if desired.
Notes
Use fresh broccoli for the best flavor and texture. Shred your cheese fresh for smoother melting. Adjust thickness by altering flour or milk amounts.
