Ingredients

  • 4 cups celery, chopped
  • 1 cup carrots, shredded
  • 1/2 cup red bell pepper, thinly sliced
  • 1/4 cup green onions, sliced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar
  • Salt and pepper, to taste

Instructions

  1. Prepare the vegetables: Wash and chop celery, shred carrots, slice red bell pepper, green onions, and chop cilantro.
  2. Mix the base: In a large bowl, combine celery, carrots, red bell pepper, green onions, and cilantro.
  3. Prepare the dressing: In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, and sugar.
  4. Combine and season: Pour the dressing over the vegetables and toss to coat. Add salt and pepper to taste.
  5. Serve immediately or chill in the refrigerator for about 30 minutes for best flavor.

Notes

For a sweeter dressing, add more sugar. Adjust seasoning according to taste.
