- 1 lb beef (chuck or brisket), cut into cubes
- 8 cups beef broth
- 4 cups egg noodles
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 carrots, sliced
- 2 stalks celery, sliced
- 2 tablespoons soy sauce
- 1 teaspoon ginger, grated
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- In a large pot, brown the beef cubes over medium-high heat, turning occasionally to get a nice sear on all sides.
- Add the chopped onion, minced garlic, sliced carrots, and celery to the pot. Sauté until the vegetables become tender, about 5-7 minutes.
- Stir in the grated ginger and soy sauce.
- Pour in the beef broth and bring to a boil.
- Reduce the heat and let it simmer for 1.5 to 2 hours, covered.
- In the last 10 minutes, add the egg noodles and cook until al dente.
- Season with salt and pepper to taste.
- Serve hot in bowls, garnished with chopped green onions.
