Ingredients
1 lb elbow macaroni
2 cups cooked shredded chicken
1/2 cup BBQ sauce (plus extra for drizzle)
3 tbsp butter
3 tbsp all-purpose flour
3 cups milk
2 cups shredded sharp cheddar cheese
1 cup shredded mozzarella
1/2 tsp smoked paprika
Salt and black pepper to taste
1/4 cup breadcrumbs (optional for topping)
2 tbsp butter (melted, for topping)
Fresh parsley or green onions for garnish
Instructions
1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
2. Cook macaroni in salted water until al dente; drain and set aside.
3. In a saucepan, melt butter over medium heat and whisk in flour to create a roux.
4. Gradually add milk, whisking until thickened.
5. Stir in cheddar and mozzarella until melted and smooth.
6. Add BBQ sauce, smoked paprika, salt, and pepper; mix well.
7. Combine the sauce, pasta, and shredded chicken in a large bowl.
8. Transfer mixture to baking dish, top with breadcrumbs (if using), and drizzle with melted butter.
9. Bake for 20–25 minutes until golden and bubbly.
10. Drizzle extra BBQ sauce on top and garnish with parsley or green onions.
Notes
Use smoked gouda or pepper jack for a flavor boost.
Add crispy bacon or caramelized onions for extra depth.
