  • 1 cup light brown sugar, packed
  • 1 large egg, room temperature
  • 1 tsp pure vanilla extract
  • 1 cup mashed ripe bananas (about 2 medium)
  • 1 cup all-purpose flour
  • 0.5 tsp salt
  • 0.5 tsp ground cinnamon
  • 0.5 cup semi-sweet chocolate chips or chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×8-inch baking pan.
  2. Mix the melted butter and brown sugar until smooth.
  3. Add the egg and vanilla extract, whisking until combined.
  4. Incorporate the mashed ripe bananas into the batter.
  5. Add the all-purpose flour, salt, and ground cinnamon, folding gently.
  6. Optional – add chocolate chips or walnuts if desired.
  7. Pour the batter into the prepared pan and smooth the top.
  8. Bake for 25–30 minutes until the edges are set and a toothpick comes out with moist crumbs.
  9. Cool completely before slicing into bars.

Notes

For best flavor, use ripe bananas and don’t overmix. Customize with your favorite add-ins.
