  • 2.5 tsp salt
  • 1.5 tbsp paprika
  • 1 tbsp chicken seasoning
  • 3 tbsp butter (unsalted)
  • 1/2 cup red onion (finely diced)
  • 1/2 cup parsley (freshly chopped)
  • 1.5 tbsp garlic (minced)
  • 1/2 tsp red pepper flakes
  • 1 cup chicken stock
  • 1 tbsp lemon juice
  • 1 cup parmesan (freshly grated)
  • 1/3 cup cream
  • 1/2 tsp dried thyme

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Mix the salt, paprika, and chicken seasoning. Rub this over the chicken.
  3. Sauté the butter in a skillet, add the red onion, and cook until translucent (3-5 minutes).
  4. Add the minced garlic and red pepper flakes, cooking for an additional minute.
  5. Pour in the chicken stock and lemon juice, adding parsley, thyme, and cream. Simmer.
  6. Nestle the seasoned chicken pieces into the sauce.
  7. Sprinkle with parmesan cheese.
  8. Bake for 30-35 minutes, or until the chicken reaches 165°F (75°C).
  9. Serve warm with extra lemon sauce.

Notes

For juicier chicken, use bone-in thighs. Marinating the chicken enhances flavor.
