- 10 chicken pieces (thighs preferred)
- 2.5 tsp salt
- 1.5 tbsp paprika
- 1 tbsp chicken seasoning
- 3 tbsp butter (unsalted)
- 1/2 cup red onion (finely diced)
- 1/2 cup parsley (freshly chopped)
- 1.5 tbsp garlic (minced)
- 1/2 tsp red pepper flakes
- 1 cup chicken stock
- 1 tbsp lemon juice
- 1 cup parmesan (freshly grated)
- 1/3 cup cream
- 1/2 tsp dried thyme
Instructions
- Preheat the oven to 375°F (190°C).
- Mix the salt, paprika, and chicken seasoning. Rub this over the chicken.
- Sauté the butter in a skillet, add the red onion, and cook until translucent (3-5 minutes).
- Add the minced garlic and red pepper flakes, cooking for an additional minute.
- Pour in the chicken stock and lemon juice, adding parsley, thyme, and cream. Simmer.
- Nestle the seasoned chicken pieces into the sauce.
- Sprinkle with parmesan cheese.
- Bake for 30-35 minutes, or until the chicken reaches 165°F (75°C).
- Serve warm with extra lemon sauce.
Notes
For juicier chicken, use bone-in thighs. Marinating the chicken enhances flavor.
