Ingredients

  • 6 large eggs
  • 1 ripe avocado
  • 1 tablespoon lime juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • Paprika for garnish (optional)
  • Chopped cilantro or parsley for garnish (optional)

Instructions

  1. Boil the eggs: Place the eggs in a pot and cover them with cold water. Bring the water to a boil over medium-high heat. Once it starts boiling, cover the pot, remove it from heat, and let the eggs sit for about 10-12 minutes.
  2. Cool the eggs: After the time is up, transfer the eggs to an ice bath. Let them cool for about 5-10 minutes.
  3. Peel the eggs: Gently tap each egg on a hard surface and roll it to loosen the shell. Start peeling from the larger end for easiest removal.
  4. Prepare the filling: Cut the peeled eggs in half lengthwise. Remove the yolks and place them in a mixing bowl. Mash the yolks with a fork until crumbly.
  5. Mash the avocado: Cut the ripe avocado in half and remove the pit. Scoop the flesh into the bowl with the egg yolks. Add lime juice and Dijon mustard. Season with salt and pepper to taste.
  6. Mix together: Combine the ingredients well until smooth. You can leave it a little chunky if you like some texture.
  7. Fill the egg whites: Spoon or pipe the avocado mixture back into the egg white halves.
  8. Garnish: Sprinkle with paprika and add chopped cilantro or parsley if desired.
