Ingredients
2 cups cooked shredded or grilled chicken
4 cups mixed greens (romaine, napa cabbage, or spinach)
1 cup shredded carrots
1 cup red cabbage, finely sliced
1 red bell pepper, thinly sliced
1/2 cup mandarin orange segments
1/4 cup sliced almonds or cashews
2 tbsp sesame seeds
2 green onions, chopped
1/4 cup chopped cilantro
**For the dressing:**
3 tbsp soy sauce
2 tbsp rice vinegar
1 tbsp sesame oil
1 tbsp honey or maple syrup
1 tbsp olive oil
1 tsp grated fresh ginger
1 clove garlic, minced
Salt and pepper to taste
Instructions
1. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, olive oil, ginger, garlic, salt, and pepper to make the dressing.
2. In a large bowl, combine greens, cabbage, carrots, bell pepper, mandarin oranges, nuts, sesame seeds, green onions, and cilantro.
3. Add chicken to the salad and drizzle with dressing.
4. Toss well until evenly coated.
5. Serve immediately or chill for 15 minutes before serving for extra freshness.
Notes
Add crispy wonton strips for extra crunch.
For a vegetarian version, swap chicken for tofu or edamame.
