- 1 cup oats
- 1/2 cup almond flour
- 1/4 cup honey or maple syrup
- 1/4 cup peanut butter or almond butter
- 1 ripe banana, mashed
- 1/2 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 cup chocolate chips or nuts (optional)
Instructions
- In a mixing bowl, combine the oats, almond flour, baking powder, and salt. Stir them together to ensure an even mix.
- In another bowl, mix together the honey (or maple syrup), peanut butter, mashed banana, and vanilla extract until smooth.
- Carefully combine the wet and dry ingredients together. If desired, fold in chocolate chips or nuts.
- Preheat the air fryer to 320°F (160°C).
- Shape the mixture into cookies with your hands.
- Line the air fryer basket with parchment paper and place the cookies in the basket.
- Cook the cookies for about 8-10 minutes, or until golden brown.
- Allow the cookies to cool slightly before serving.
Notes
Store leftover cookies in an airtight container at room temperature for up to 3 days or refrigerate for up to a week. They can also be frozen for up to 3 months.
