Description

A quick and healthy breakfast option that combines oats, almond flour, and bananas for a delicious and nutritious snack.


Ingredients

  • 1 cup oats
  • 1/2 cup almond flour
  • 1/4 cup honey or maple syrup
  • 1/4 cup peanut butter or almond butter
  • 1 ripe banana, mashed
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup chocolate chips or nuts (optional)

Instructions

  1. In a mixing bowl, combine the oats, almond flour, baking powder, and salt. Stir them together to ensure an even mix.
  2. In another bowl, mix together the honey (or maple syrup), peanut butter, mashed banana, and vanilla extract until smooth.
  3. Carefully combine the wet and dry ingredients together. If desired, fold in chocolate chips or nuts.
  4. Preheat the air fryer to 320°F (160°C).
  5. Shape the mixture into cookies with your hands.
  6. Line the air fryer basket with parchment paper and place the cookies in the basket.
  7. Cook the cookies for about 8-10 minutes, or until golden brown.
  8. Allow the cookies to cool slightly before serving.

Notes

Store leftover cookies in an airtight container at room temperature for up to 3 days or refrigerate for up to a week. They can also be frozen for up to 3 months.
