Ingredients

  • 10 oz egg noodles
  • 1 lb chicken breast or thighs, boneless and skinless
  • 1 large carrot, thinly sliced
  • 1 bell pepper, thinly sliced
  • 2 tbsp minced garlic (about 6 cloves)
  • 4 scallions (white parts lengthwise, green parts cut into 2-inch pieces)
  • 1 tbsp light soy sauce
  • 1/2 tsp toasted sesame oil
  • 1/2 tbsp cornstarch
  • 1 tbsp cooking oil
  • 1.5 tbsp dark soy sauce
  • 2 tbsp oyster sauce
  • 1/2 tsp sugar
  • 2 tsp cornstarch (for sauce)
  • 1/2 tsp pepper (white or black)
  • 1/4 cup water or low sodium chicken broth

Instructions

  1. Marinate the chicken: Slice the chicken into thin strips and toss with 1 tbsp light soy sauce, ½ tbsp cornstarch, and 1 tbsp cooking oil. Let it marinate for 15 minutes.
  2. Prep the veggies: While the chicken marinates, thinly slice the carrot and bell pepper. Chop the white parts of the scallions lengthwise and cut the green tops into 2-inch pieces.
  3. Make the sauce: In a bowl, combine 1 tbsp light soy sauce, 1.5 tbsp dark soy sauce, 2 tbsp oyster sauce, ½ tsp sugar, 2 tsp cornstarch, and ½ tsp pepper.
  4. Cook the noodles: Prepare 10 oz egg noodles according to the package instructions. Once done, drain and rinse under cold water. Toss with a little oil.
  5. Cook the chicken: Heat 2 tbsp oil in a wok or large pan over medium-high heat. Add the marinated chicken and stir-fry until fully cooked, about 5 minutes.
  6. Stir-fry aromatics: In the same pan, add the scallion whites and stir-fry for about 1 minute, then add minced garlic and cook until fragrant.
  7. Add veggies: Toss in the sliced carrot and cook until bright orange, then add the bell pepper and stir-fry until slightly tender.
  8. Combine ingredients: Return the cooked chicken to the pan and mix well. Pour in the sauce and let it bubble for a minute.
  9. Add noodles: Add the cooked noodles and gently toss until well-coated with the sauce.
  10. Finish and serve: Stir in the green tops of the scallions and drizzle with toasted sesame oil.

Notes

For added flavor, serve with sesame seeds or alongside crispy wontons or spring rolls.
