A showstopper meal perfect for a romantic dinner, combining tender beef, flavorful mushroom duxelles, and flaky pastry.
Ingredients

- 2 lb beef tenderloin
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 12 oz mushrooms, finely chopped
- 4 oz pâté (optional)
- 8 slices of prosciutto
- 1 sheet of puff pastry (thawed if frozen)
- 1 egg, beaten with a splash of water (for egg wash)
- Fresh thyme (for garnish)
Instructions
- Season the beef tenderloin with salt and pepper. In a skillet over medium-high heat, add olive oil and sear the beef on all sides until browned, about 2-3 minutes per side. Remove from heat and let cool.
- In the same skillet, add the chopped mushrooms and cook over medium heat until dry, about 10 minutes. Season with salt, pepper, and fresh thyme. Remove from heat and allow to cool.
- On a clean surface, lay the prosciutto slices slightly overlapping. Spread the mushroom mixture and pâté over the prosciutto. In the center, place the cooled beef tenderloin and tightly wrap the prosciutto around it. Refrigerate for 15 minutes.
- Roll out the puff pastry on a floured surface. Place the wrapped beef in the center, fold the pastry around the beef, and seal the edges. Brush with egg wash.
- Preheat the oven to 400°F (200°C). Place the wrapped beef on a baking sheet and bake for about 25-30 minutes until the pastry is golden brown. Let it rest for 10 minutes before slicing.
Notes
Serve sliced with a side of roasted vegetables or creamy mashed potatoes. A drizzle of red wine reduction enhances the dish.
